This sake is the nama or unpasteurized version of the Ginfubuki sake. Daijiro makes incredibly strong namazake. In addition to the rich, umami flavors like the unpasteurized version, this sake has strong flavors and aromas of raw nuts that become more toasted nut when the sake is heated.  This sake has a slightly higher acidity and finishes a little drier than its pasteurized counterpart.

WHY WE LIKE IT

  • Made from prefectural rice strain Ginfubuki, grown locally in Higashiomi, Shiga, which tends to provide rich umami flavors
  • Kimoto + muroka genshu (unfined, not diluted) means big bold flavor
  • This is an unpasteurized version of the previous sake, giving it more complexity and wonderful flavor of nuts
  • Great food pairing sake for richer foods and various cheeses
